Description

This easy tzatziki recipe combines thick Greek yogurt, crisp cucumber, fresh dill, mint, extra virgin olive oil, and lemon juice. It creates a cool, creamy, tangy Greek cucumber yogurt sauce in about 10 minutes with no cooking required.


Ingredients

400 g cucumber, grated

400 g full-fat Greek yogurt

2 tablespoons fresh mint leaves, chopped

2 tablespoons fresh dill leaves, chopped

2 tablespoons extra virgin olive oil

1/2 teaspoon salt

1/2 teaspoon garlic, minced, optional

Fresh lemon juice, to taste


Instructions

1. Grate the cucumber without peeling it. Lightly salt it, then place it in a cheesecloth or clean kitchen towel and squeeze out as much liquid as possible.

2. If using regular yogurt instead of Greek yogurt, strain it until thick before preparing the sauce.

3. Add the drained cucumber, yogurt, mint, dill, olive oil, lemon juice, salt, and optional garlic to a mixing bowl.

4. Stir thoroughly until the cucumber and herbs are evenly distributed throughout the yogurt.

5. Let the tzatziki rest for about 5 minutes so the flavors blend. Serve immediately or chill before serving for a cooler, more developed flavor.

Notes

Drain the grated cucumber thoroughly to keep the tzatziki thick and creamy.

Salting the cucumber before squeezing helps draw out more moisture.

Full-fat Greek yogurt gives the richest flavor and creamiest texture.

If using regular yogurt, strain it until thick before mixing.

Garlic is traditional, but you can leave it out for a milder flavor.

A cheesecloth or clean kitchen towel works well for removing cucumber liquid.

You can replace fresh dill with extra mint or a mixture of parsley and mint.

For a dairy-free version, use a thick, unsweetened plant-based yogurt.
