Description
Strawberry Gelatin made with fresh strawberries, lime juice, and honey for a naturally sweet and tart dessert. It sets up smooth and wobbly, then firms more over time, and you can serve it in glasses or unmold it for a clean finish.
Ingredients
2 1/2 cups fresh strawberries, divided
3 ounces lime juice (about 2 to 3 large limes)
1/2 cup honey
2 tablespoons powdered gelatin (unflavored)
1 cup water
Optional: whipped cream, for serving
Optional: additional sliced strawberries, for serving
Instructions
1. Remove stems from the strawberries.
2. Blend 2 cups of strawberries into a smooth puree.
3. Slice the remaining 1/2 cup strawberries and set aside.
4. Strain the puree to remove pulp and seeds, aiming for about 1 cup strained puree.
5. Stir lime juice and honey into the strained puree until fully mixed.
6. Pour 1/2 cup of the strawberry mixture into a bowl, sprinkle gelatin over the top, and let it sit for 2 to 3 minutes to bloom.
7. Heat the remaining strawberry mixture with the water in a small pot until it reaches a boil.
8. While whisking, pour the hot mixture into the bloomed gelatin bowl and whisk until fully dissolved and smooth.
9. Chill the mixture for 1 hour, then skim off any foam on top.
10. Add sliced strawberries to four glasses or molds, then pour in the gelatin mixture.
11. Refrigerate for at least 4 hours or overnight until fully set.
12. Serve in glasses, or unmold by dipping the mold briefly in warm water, then turning it out.
13. Top with whipped cream and extra strawberries if desired.
Notes
For best flavor, use raw honey and grass fed gelatin if possible.
The gelatin firms more over time, so for a softer texture, eat within a day.
Lime juice helps preserve the flavor for up to 3 days in the fridge.
