Easy 3 Ingredient Keto Jello is a refreshing, sugar free dessert made with unflavored gelatin, hot and cold water, and a stevia sweetened drink mix. It fits a low carb keto style with virtually zero net carbs, and it yields 2 servings at about 37 calories each.


Ingredients

1 cup cold water

3 to 4 tablespoons unflavored gelatin powder

1 cup hot water

1 to 2 tablespoons sugar free drink mix powder, preferably stevia sweetened


Instructions

1. Pour cold water into a bowl or measuring jug.

2. Sprinkle gelatin evenly over the cold water, then let it bloom for 5 minutes.

3. Pour hot water over the bloomed gelatin, then whisk until fully dissolved and smooth.

4. Add sugar free drink mix, then whisk and taste, and adjust sweetness if needed.

5. Strain through a fine mesh strainer if you see any undissolved bits.

6. Pour into one container or two small cups.

7. Refrigerate until set, about 2 to 4 hours, then serve.

Notes

Use 3 tablespoons gelatin for a softer set, and use 4 tablespoons for a firmer, more gummy set.

Choose a drink mix without maltodextrin to keep carbs low.

Sodium and sweetness can vary by drink mix, so adjust to taste and label.
