Description
Cottage Cheese Breakfast Rounds are quick, high protein, 3 ingredient rounds made from cottage cheese, eggs, and everything seasoning. Blend the batter smooth, then cook thin circles in a non stick skillet for an easy low carb, gluten free, vegetarian breakfast.
Ingredients
1/2 cup cottage cheese (full fat preferred but low fat also works)
2 large eggs
1/2 teaspoon everything seasoning (salt alone can be used instead)
Cooking oil or oil spray (such as avocado oil) for the pan
Instructions
1. Warm a non stick skillet over medium heat with a light coating of oil or oil spray.
2. In a small blender, combine the cottage cheese, eggs, and everything seasoning, then blend until the mixture is perfectly smooth and pourable.
3. Pour about 1/4 cup of batter into the hot pan for each round, creating thin pancake like circles.
4. Cook without disturbance for 1 to 2 minutes until the edges firm up, then carefully flip and cook the other side for 1 to 2 minutes until golden and set.
5. Remove from the pan and add your chosen toppings, or serve the rounds plain.
Notes
Blend the mixture until completely smooth so the texture turns thin and pancake like, which helps even cooking and easier flipping.
Cook long enough on the first side before flipping so the rounds hold together and do not tear.
If you double the recipe, pre cook and store in the fridge for quick breakfasts later in the week.
For a sweet version, skip the seasoning, add cinnamon and vanilla, then top with fruit or nut butter.
For heat, add red pepper flakes or try a spiced cottage cheese option.
