Description
A refreshing, color-changing herbal drink made with butterfly pea flowers, lemon juice, and soda water. Sweet, tangy, and antioxidant-rich, it’s a fun drink for any occasion.
Ingredients
3 cups warm water
½ cup dried or fresh butterfly pea flowers
⅓ cup granulated sugar
⅓ cup lemon juice
3 cups ice
3 cups soda water
Optional: lemon slices and rosemary for garnish
Instructions
1. Pour warm water into a cup and add butterfly pea flowers.
2. Let them steep for 5–10 minutes until the water turns deep blue.
3. Strain the flowers out.
4. Stir in sugar while the tea is still warm until fully dissolved.
5. Mix in lemon juice and watch the color change.
6. Fill glasses halfway with ice.
7. Pour tea mixture halfway into each glass.
8. Top with soda water and garnish if desired.
9. Serve immediately.
Notes
Use warm—not boiling—water for better color.
Adjust lemon juice or sugar to taste.
Steep longer or use more flowers for deeper blue.
Store the tea base in the fridge and add soda water just before serving.
Try adding mint or ginger for a twist.
